Healthy Hazelnut Balls – Homemade Ferrero Rocher

Healthy Hazelnut Ferrero Balls

Ingredients:

BASE:

  • 150g hazelnuts
  • 2 big or 2 1/2 tbsp greek sugar-free yogurt (lactose-free)
  • 2 tbsp cocoa
  • 2-3 tbsp honey

FOR DECORATION:

  • 20g chopped hazelnuts
  • 13 hazelnuts (if it’s possible without skin/roasted)
  • 80g sugar-free dark chocolate (lactose-free)
  • 4 tbsp plant milk

Instructions:

  1. Blend hazelnuts until they get like flour.
  2. Then add cocoa, honey, and greek yogurt. Blend well.
  3. Transfer the mixture to the bowl.
  4. Take a small piece of the mixture, place hazelnut in the middle, and roll into a ball.
  5. Melt the chocolate with plant milk. The chocolate mixture needs to be liquid, if necessary you can add more plant milk.
  6. Add chopped hazelnuts to melted chocolate.
  7. Take the ball, roll it into the chocolate.
  8. Place the balls in the fridge for a couple of hours or enjoy it right away. Store in the fridge.

Vegan Rafaello Balls

Homemade Sugar-free Rafaello Balls – Your Perfect Dessert

Ingredients:

  • 85g cashews (1 hour before soaked in hot water)
  • 3 tbsp greek sugar-free yogurt (lactose-free)
  • 130g shredded coconut
  • 3 tbsp honey
  • 13 almonds (if it’s possible, choose blanched – without skin)
  • 30g – 50g shredded coconut for decoration

Instructions:

  1. Blend cashews (soaked before in hot water for 1 hour) with greek yogurt and honey. If the honey is hard or firm, melt it in a pan in low heat. Blend until the mass gets creamy.
  2. Take a bowl and combine well cashew mixture and shredded coconut.
  3. Take a small piece of the mixture, place an almond in the middle, and roll into a ball.
  4. Roll into shredded coconut.
  5. Place the balls in the fridge for a couple of hours or enjoy it right away. Store in the fridge.
