Ingredients:

  • 2 ripe bananas (approx. 200g)
  • 120g almond flour
  • 1/2 tsp baking powder
  • 1 egg
  • 30g coconut oil, melted
  • 1 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 30g nut butter (almond or peanut butter work well)
  • 80–100g berries (blueberries, raspberries, etc.) fresh or frozen
  • Optional sweetener: 1–2 tbsp Jerusalem artichoke, maple or date syrup, or honey (adjust based on banana ripeness and berry tartness)

Instructions:

  1. Preheat your oven to 180°C (356°F) and line or grease a small baking pan (~18×18 cm or a loaf pan).
  2. Mash the bananas and mix with the egg.
  3. Add melted coconut oil, vanilla, cinnamon, nut butter, and sweetener (if using). Mix well.
  4. Stir in almond flour and baking powder until fully combined.
  5. Gently fold in the berries.
  6. Pour the batter into the prepared pan and bake for 30–35 minutes or until golden on top and set in the middle.
  7. Let cool slightly before slicing. Enjoy as is or serve with Greek yogurt, more berries, or a drizzle of nut butter.
