- 2 ripe bananas (approx. 200g)
- 120g almond flour
- 1/2 tsp baking powder
- 1 egg
- 30g coconut oil, melted
- 1 tsp cinnamon
- 1/2 tsp vanilla extract
- 30g nut butter (almond or peanut butter work well)
- 80–100g berries (blueberries, raspberries, etc.) fresh or frozen
- Optional sweetener: 1–2 tbsp Jerusalem artichoke, maple or date syrup, or honey (adjust based on banana ripeness and berry tartness)
Instructions:
- Preheat your oven to 180°C (356°F) and line or grease a small baking pan (~18×18 cm or a loaf pan).
- Mash the bananas and mix with the egg.
- Add melted coconut oil, vanilla, cinnamon, nut butter, and sweetener (if using). Mix well.
- Stir in almond flour and baking powder until fully combined.
- Gently fold in the berries.
