TIME: 10 min preparation, 30 minutes to set in the fridge | SERVINGS: 20

Ingredients:

  • 20 juicy pitted dates
  • 50g dark sugar-free & vegan chocolate
  • 1 handful of toasted chopped hazelnuts
  • 2 tbsp coconut oil

Instructions:

  1. Melt the chocolate with coconut oil at a very low temperature.
  2. Dip the dates into the chocolate and cover them fully.
  3. Sprinkle each date with chopped roasted hazelnuts.
  4. Put it in the fridge to set for 30 minutes or more. Store in the fridge.

These Energy Balls are full of juicy dates and crunchy nuts, that gives a sweet and crispy taste. This is a guilt-free sweet snack, it’s refined sugar-free, vegan, and lactose-free, you have to try this.

A few tips:

  • If the dates are hard, soak them in a hot water for at least 15-30 minutes,
  • You can use any other nuts instead of cashews.
  • You can be creative with decoration – you can roll balls into shredded coconut, seeds, cornflakes, cocoa, chopped nuts, chopped chocolate pieces, almond flakes, etc.

What are the key ingredients?

Dates – Try to choose the softest and juiciest dates that you can find, then they will be easier to blend or soak the dates in a hot water for 10 to 30 minutes. This is my favorite and fastest way to soften dates.
Hazelnuts – Choose the best quality hazelnuts. You can replace them with any other your favorite nuts. If you don’t like the nut pieces in the balls, you can blend separately the halzelnuts until you get the consistency of the flour and add to the blended dates mixture.
Peanut butter – Choose a good quality peanut or other nut butter, which is sugar-free and natural.
Cocoa Powder – This makes the taste of chocolate. You can adjust the cocoa to taste that you like the best, but don’t overdo it, because it could make the balls dry and super chewy.

Ingredients:

  • 85g soft and juicy dates
  • 30g hazelnuts
  • 1 tbsp peanut butter
  • 2 tbsp cocoa powder
  • 2 tbsp shredded coconut and/or chopped hazelnuts for decoration

Instructions:

  1. Blend all ingredients until you get a sticky mixture. 
  2. Make a ball with your palms and set it aside until all mixture is out.
  3. Roll into the balls in shredded coconut or chopped hazelnuts. 
  4. Place in the fridge to get firm. Enjoy. 🙂

  • 75ml greek/plain lactose-free yogurt

TIME: 20 min preparation | 2 hours to cool | SERVINGS: 22

Ingredients:

  • 100g coconut cream – only the thick part from can
  • 180g sugar-free dark chocolate (120g for candies, 60g for decorating)
  • 90g any kind of nut butter. I used hazelnut nut butter with chocolate.
  • 50g coconut flour
  • 1 tsp coconut oil

For decoration: chopped nuts, seeds, shredded coconut, cocoa, but you can do it without decoration as well.

Instructions:

  1. Take a pan. Melt the chocolate at a very low temperature.
  2. When the chocolate is almost melted, add the coconut cream and nut butter. Mix everything until it’s well combined.
  3. Remove from the heat and add coconut flour, mix all well.
  4. Put the mixture in the fridge to cool for one hour.
  5. Form balls (truffles) by hands.
  6. Melt the remaining chocolate with coconut oil.
  7. Put the truffle on a teaspoon, but hold it over the bowl or pan with the melted chocolate, then with another teaspoon spread over the chocolate. If you want to decorate the truffles, you will need to do it right away, because the chocolate will harden.
  8. Put the truffles in the fridge for 1 hour.

Instructions:

  1. Blend blueberries with greek yogurt and honey.
  2. Take a bowl, add coconut flour and blueberry mixture, mix all well. Mixture need to be smooth, if not, add more yogurt.
  3. Make with your hands a round ball.
  4. Roll into shredded coconut.
  5. Place the balls in the fridge for 1 hour or enjoy it right away. Store in the fridge.
