- 150 g almond flour (about 1½ cups)
- 100 g oat flour (about 1 cup)
- 3 eggs
- 1 tsp baking powder
- 1 tsp baking soda
- 60 ml Jerusalem artichoke syrup, runny honey, maple syrup, or other natural liquid sweetener
- 1 orange -> 1 tsp or 1 tbsp zest from orange (adjust the taste)

- Ground ginger – 1 tsp
- Ground cardamom – ½ tsp
- Ground nutmeg – ¼ tsp
- Ground cloves – ½ tsp
Instructions:
- Preheat oven to 180 °C (356 °F). Line or lightly grease a loaf tin (approx. 22 cm).
- In a large bowl, add eggs and syrup. Whisk until fully combined.
- Add bananas and mash with a fork. You can leave some small banana chunks if you like — they melt while baking and add extra natural sweetness and a creamy texture to the bread.
- In a separate bowl, mix almond flour, oat flour, baking powder, baking soda, and all spices.
- Gently fold dry ingredients into the wet mixture until combined.
