Vegan and Sugar-free Ice Cream

Summer is the perfect time to try out homemade ice cream recipes. I have prepared for you super easy ice cream recipe. Just 4 – 5 main ingredients and a blender, that is all you need to make this sweet and creamy ice cream. It’s more healthy than store-bought because it’s refined sugar-free and sweetened with only natural sweeteners – dates. It’s also light – heavy cream-free, and there are no added other artificial ingredients.

Vegan and Healthy Ice Cream

TIME: 10 min preparation, a couple of hours or overnight to set in the freezer | SERVINGS: 5 (depends on ice-cream mold type and size)

Ingredients:

  • 300 ml coconut milk/cream – canned
  • 5 juicy and soft dates or more (adjust to your sweet tooth)
  • 1/4 tsp cinnamon (optional)
  • 1 tsp peanut butter
  • 50g dark chocolate
  • handful of chopped hazelnuts or other nuts

Instructions:

  1. Take a blender and blend coconut milk, dates cinnamon, and peanut butter until you get a creamy mixture.
  2. Fill ice cream molds with the mixture, and put them in the freezer for 2 hours or until the ice cream is set and firm.
  3. Chop the hazelnuts into small pieces.
  4. Melt the chocolate.
  5. Cover the top of the ice cream with chocolate and sprinkle it with the hazelnuts.
  6. Put the back in the freezer for 30 minutes or more to set and enjoy. 🙂
