Ingredients:

For the cake:

  • 3 ripe bananas
  • 190g oat flour
  • 230g grated carrot
  • 30ml plant-based milk
  • 40g agave syrup
  • 75g coconut oil (melted)
  • 1 tbsp cinnamon
  • 2 tsp baking powder
  • 1 tsp baking soda

For the frosting:

  • 200g thick plant-based greek style yoghurt
  • 1 – 2 tsp agave (adjust to taste)
  • 1/2 tsp cinnamon (optional)

Instructions:

  1. Preheat the oven to 165°C.
  2. Take a cake tin. Line it with baking paper or grease it with coconut oil. Set aside.
  3. Take a mixing bowl, and add all dry ingredients – oat flour, baking powder, baking soda, and cinnamon. Combine all well.
  4. In another bowl, add all wet ingredients – add bananas and mash them using a fork, add grated carrot, agave syrup, coconut oil, and milk. Stir it all.
  5. Combine both mixtures slowly and evenly.
  6. Evenly pour the batter into the cake tin. Bake for 50 minutes, then allow to cool completely before frosting.
  7. To make the frosting, add all ingredients into a blender or stir in a mixing bowl.
  8. Spread over the frosting and enjoy!
