TIME: 10 min preparation, 20 min baking | SERVINGS: 8
Ingredients:
- 150 g oat flour
- 2 ripe bananas
- 90 ml greek style lactose-free or vegan yogurt
- 50 g agave syrup
- 2 tbsp coconut oil (melted)
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- 100 g chopped apples
- a handful of almond flakes
Instructions:
- Preheat the oven to 180°C.
- Prepare the muffin tins, and set them aside.
- Take a mixing bowl, and add all dry ingredients – oat flour, baking powder, soda, and cinnamon. Combine all well.
- Chop the apple into small cubes, and add cinnamon. Stir it evenly.
- Mash the bananas with the fork, and add yogurt, coconut oil, and agave syrup. Stir all together until you get a smooth mixture.
- Combine both mixtures, but do not overmix.
- Pour 1/3 of the batter into the muffin tins, add 1 – 2 tbsp apple cubes, then add the batter and sprinkle the muffins with almond flakes.
- Bake the muffins for 20-25 minutes at 180°C or until the toothpick comes out clean.
