This delicious Almond Apple Cake is made with fresh juicy apples and crispy toasted almond flakes. It’s moist and soft at the same time. This juicy and healthy cake is easy to make with the perfect combination of fall flavours. It’s vegan, dairy-free, white wheat flour-free.

TIME: 15 preparation, 35 min baking | SERVINGS: 10- 12

Ingredients:

  • 230g oat flour
  • 115g coconut sugar
  • 60ml coconut oil (melted)
  • 180ml almond milk
  • 60ml greek style vegan yogurt
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 3 small or 2 big apples
  • 100g almond flakes

Instructions:

  1. Preheat the oven to 180°C.
  2. Peel the apples and into small cubes. (if you want to keep the apples from browning check the methods below)*
  3. Take a cake tin. Line it with baking paper or grease it with coconut oil. Set aside.
  4. Take a mixing bowl and add melted coconut oil, yogurt, milk and sugar. Whisk well all with the electric mixer.
  5. In another bowl, add all dry ingredients – flour, baking powder, soda, and cinnamon. Combine all well.
  6. Combine both mixtures slowly and evenly.
  7. Pour the batter into the cake tin, top with apple cubes and almond flakes. You can also press the toppings into the batter for a more evenly juicier taste.
  8. Bake for 35 minutes in 180°C.

* Methods to prevent apples from turning brown:

  • Take a bowl, add 250ml water and 2 tbsp honey, put into apples for 10 minutes.
  • If you have a lemon, lime or orange at home, just squeeze juice onto the apples.
