TIME: 15 preparation, 65 – 70 min baking | SERVINGS: 10- 12
Ingredients:
- 200g oat flour
- 250g zucchini (grated)
- 190g coconut sugar
- 120ml oat or other plant-base milk
- 125g coconut oil (melted)
- 75g greek style vegan plain yogurt
- 50g cocoa powder
- 3 tbsp baking powder
- 1 tsp baking soda
- 1/3 tsp salt
- 80g vegan dark chocolate or chocolate chips (optional)
Instructions:
- Preheat the oven to 180°C.
- Line a rectangular baking tray or loaf tin with baking paper, or grease it with coconut oil.
- Take a mixing bowl and add grated zucchini, milk, melted coconut oil, coconut sugar, and yogurt. Stir it well until well combined.
- In another bowl, add all dry ingredients – oat flour, cocoa, baking powder, soda, and salt. Combine all.
- Mix both mixtures slowly and evenly.
- Mix into the batter half of the chocolate chips/pieces.
- Pour the batter into the tin, and top with more chocolate chips (optional). You can also press the toppings into the batter for a more evenly juicier taste.
- Bake for ~ 65 – 70 minutes in 180°C.
- Enjoy it with peanut butter, yogurt, or for a more fancy version top it with some vegan vanilla ice cream.
