TIME: 10 preparation, 20 min baking | SERVINGS: 10- 12
Ingredients:
- 200g oat flour
- 140g coconut sugar
- 60ml coconut oil (melted)
- 180ml almond, soya or other plant-based milk
- 60ml greek style vegan yogurt
- 60g cocoa powder
- 50g vegan dark chocolate or vegan dark chocolate chips
Instructions:
- Preheat your oven to 180°C and grease a round cake pan.
- In a large bowl, whisk together the dry ingredients — oat flour and cocoa powder.
- In another bowl, add melted coconut oil, yogurt, milk and sugar. Whisk well all with the electric mixer.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
- Fold 1/2 of the chopped vegan chocolate or chocolate chips into the batter.
- Pour the batter into the greased cake pan and spread it evenly.
- Sprinkle the cake with left chopped chocolate.
- Bake for 20 minutes.
- Allow the brownie cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
