Ingredients:

  • 200g oat flour
  • 140g coconut sugar
  • 60ml coconut oil (melted)
  • 180ml almond, soya or other plant-based milk
  • 60ml greek style vegan yogurt
  • 60g cocoa powder
  • 50g vegan dark chocolate or vegan dark chocolate chips

Instructions:

  1. Preheat your oven to 180°C and grease a round cake pan.
  2. In a large bowl, whisk together the dry ingredients — oat flour and cocoa powder.
  3. In another bowl, add melted coconut oil, yogurt, milk and sugar. Whisk well all with the electric mixer.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
  5. Fold 1/2 of the chopped vegan chocolate or chocolate chips into the batter.
  6. Pour the batter into the greased cake pan and spread it evenly.
  7. Sprinkle the cake with left chopped chocolate.
  8. Bake for 20 minutes.
  9. Allow the brownie cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
