Healthy Snickers Bars

TIME: 15 min preparation |2 hours to chill in the freezer |SERVINGS: 14

Ingredients:

BASE:

  • 150g sugar-free cookies
  • 4 tbsp coconut oil

CARAMEL LAYER:

  • 200g dates
  • 110ml plant milk
  • 1 – 2 tbsp peanut butter
  • 1/4 tsp salt
  • 120g unsalted peanuts (you can use salted as well)

TOP LAYER:

  • 100g vegan sugar-free dark or regular dark chocolate (for easiest version – one large snickers mixture which you cut in pieces/bars)
  • or 200g (complex version for making bars that all are covered with chocolate) + 2 tbsp coconut oil. For this time I chose this.

Instructions:

  1. Blend cookies, add melted coconut oil, mix well.
  2. Smooth out the cookie mixture in a parchment square/rectangle pan.
  3. Blend the dates with milk, salt and peanut butter until a creamy caramel mixture is formed. This can take time if the blender is not high-speed power enough or dates are not so soft. Tip! Before blending dates, you can soak them in hot water for 10 minutes to make it softer.
  4. Toast the peanuts in a pan until they get light brown.
  5. Take a bowl, add caramel mixture and peanuts, combine all.
  6. Smooth out the caramel mixture on a cookie base.

Complex version for making bars:

  1. Put the pan with cookie and caramel mixtures in the freezer for 1-2 hours.
  2. Cut the mixture into pieces – bars.
  3. Melt the chocolate with coconut oil and spread over it to every bar.
  4. Put the bars in the freezer for 2 hours.

Easiest version for top layer:

  1. Melt the chocolate and spread over the caramel layer, place in freezer for 2 hours.
  2. Cut in bars and hold in the freezer.

Sugar-free Homemade Energy Bars

TIME: 10 minutes | SERVINGS: 8

Ingredients:

  • 200g dates
  • 50g dried apricots or plums
  • 200g almonds
  • 150g pumpkin seeds
  • 2 tbsp cocoa
  • 100g sugar-free vegan or regular dark chocolate

Instructions:

  1. Mash or blend almonds that the nut pieces remain. Place them in the bowl.
  2. Blend dates and apricots, then add cocoa and blend all. (You can soak the dates in cold water for 1-2 hours or faster version soak them in hot water for 10 minutes to get them soft and easy to blend).
  3. Add the mixture to almonds, add pumpkin seeds and mix well.
  4. Smooth out the mixture in a parchment square pan. Press the mixture covering the whole pan.
  5. Melt the chocolate – a heat-proof bowl over a pan of simmering water or use the microwave at 10-15 seconds.
  6. Spread over the chocolate.
  7. Put the pan in the freezer for two hours or until firm. Store in the freezer.

Healthy Plum Nut Bars with Hazelnuts

Ingredients:

  • 150g dried plums
  • 50g dates
  • 100g mixed nuts
  • 100g hazelnuts
  • Β½ tsp cinnamon
  • 2 tbsp fresh orange juice or other fruit juice
  • 100g sugar-free dark chocolate (vegan – optional)

Instructions:

  1. Blend mixed nuts, but make sure that the nut pieces remain. Place them in the bowl.
  2. Blend plums, dates, cinnamon, and orange or other fruit juice together until the mixture starts to go smooth.
  3. Mix both mixtures together, add whole hazelnuts.
  4. Smooth out the mixture in a parchment square/rectangle pan. Press the mixture covering the whole pan.
  5. Melt the chocolate and spread over the mixture.
  6. Put the pan in the freezer for 2 hours or until firm. Cut in bars.
  7. Store in the freezer.

These coconut bounty bars are a healthy version of the real bounty bars. Very easy and fast to cook. These healthy bounty bars are sugar-free and lactose-free.

  • 2 tbsp coconut, almond, or oat flour
  • 150g unsweetened shredded coconut
  • 3 tbsp coconut or other plant milk
  • 3 tbsp honey (melted)
  • 130g sugar-free vegan chocolate

Instructions:

  1. Mix coconut and honey together. Honey needs to be melted and creamy.
  2. Add flour and milk, mix well all together.
  3. Form bars with your hands and place them on the plate.
  4. Put them in the freezer for 30 minutes.
  5. Melt the chocolate – a heat-proof bowl over a pan of simmering water or use the microwave at 10-15 seconds.
  6. Dip every bar into chocolate until it’s all covered and place to plate.
  7. Put them again in the freezer for two hours.
