How to store Cheesecake?

Store in the fridge for up to 5 days. Store in the freezer for 3 months. I recommend cutting the cheesecake into bars before freezing and before serving the cheesecake bars rest at room temperature for 30 minutes to 1 hour.

Tools:

  • High-speed blender and/or food processor
  • Square or rectangular jar or bowl that you can put in the freezer

TIME: 15 min preparation, 1-2 hours to freeze| SERVINGS: 10

Ingredients:

Base:

  • 100g shredded coconut
  • 100g cashews 
  • 10 soft and juicy dates

Filling:

  • 200g cashews (soaked in a hot water for 2 – 4 hours)
  • 200g coconut cream (thick part, canned)
  • 100g plant-based yogurt
  • 60g honey (adjust to taste)
  • 10 big & juicy strawberries or more

Instructions:

  1. Take a food processor or high-speed blender and blend together cashews, dates, and shredded coconut. If you don’t have a food processor, I recommend first blending cashews, then adding dates and coconut.
  2. Take a square or rectangular far or bowl that you can put into the freezer. Line it with baking paper.
  3. Spread out and press evenly the cashew, coconut, and date mixture.
  4. Then take a blender and blend all other ingredients until you get a creamy cheesecake filling. Adjust to the taste strawberries and honey.
  5. Pour over cheesecake filling.
  6. Put the cheesecake in the freezer to set it up for 1 or 2 hours.
  7. Cut in bars, if necessary let the bars rest at room temperature for 30 minutes to 1 hour.

Chocolate Covered Berry Jam Bites

TIME: 15 min preparation, 15 minutes to set, 1-2 hours to freeze| SERVINGS: 6

Ingredients:

  • 2 big handfuls of fresh or frozen berries
  • 1 tbsp honey
  • 2 tbsp chia seeds
  • 60g vegan sugar-free chocolate 
  • 1 tbsp coconut oil

Ingredients:

  1. Mash the berries with the fork into a puree. If you use frozen, then you can unfreeze them in a small pot at medium heat until they start to dissolve.
  2. Add honey and chia seeds. Mix all well.
  3. Leave the mixture for 15 minutes to set.
  4. Take a plate, cover it with baking paper, and with a tablespoon put a small amount of the jam on it.
  5. Put in the freezer until solid.
  6. Melt the chocolate and coconut oil at a very low temperature.
  7. Cover the berry jam bites in chocolate. Put in the fridge to set. Store in the fridge.

TIME: 15 min preparation, 12 – 15 minutes baking | SERVINGS: 12

Ingredients:

  • 1/2 cup oat flour 
  • 1/2 cup mixed nuts
  • 1 ripe banana
  • 1 tsp baking powder
  • 2 tbsp coconut sugar
  • 2 tbsp olive oil

Ingredients:

  1. Preheat the oven to 180ยฐC
  2. Blend mixed nuts until you reach almost the consistency of flour.
  3. Combine all dry ingredients – flour and blended mixed nuts, coconut sugar, and baking powder.
  4. Mash with the fork banana. 
  5. Add mashed banana and olive oil to the mixture and combine all well.
  6. Line the baking tray with baking sheet.
  7. With a tablespoon take a small amount of mixture and place it on the baking sheet.
  8. Shape the cookies with a tablespoon, palms or fingers.
  9. Sprinkle with more chopped nuts, berries ir chocolate chips. I used chopped pistachio.

Vegan Tiramisu

TIME: 20 min preparing, 30 minutes baking, at least 3 hours or overnight in the fridge | SERVINGS: 10

Ingredients:

Biscuits:

  • 180g oat flour
  • 75g coconut sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 120ml oat or soya milk
  • 120g ripe banana mashed banana
  • 30g coconut oil (melted)

Cream:

  • 250ml vegan whipping cream
  • 70g coconut sugar
  • 1 tsp vanilla extract (optional)

Toppings/other ingredients:

  • 200ml coffee
  • 2 tbsp cocoa

Instructions:

  1. Preheat the oven to 180ยฐC, line a rectangular or square baking tray with baking paper or grease it with coconut oil.
  2. Combine all dry ingredients – flour, baking powder, soda, and coconut sugar in a large mixing bowl.
  3. Mix separately all wet ingredients – milk, coconut oil, and ripped mashed banana.
  4. Slowly add wet ingredients to dry, and combine the mixture well. Donโ€™t over-mix if you want to get it fluffy and soft.
  5. Take a baking tray and pour the batter evenly.
  6. Bake for 35 minutes until ready or the toothpick comes out clean.
  7. Prepare the coffee in a bowl in which you can put a cookie the size of a finger.
  8. After the biscuit base is ready, set it aside to cool down.
  9. Continue with the preparation of the cream. Take a large mixing bowl, and add vegan whipping cream, sugar, and vanilla extract. Use a hand mixer to make the cream fluffy, and mix it until it has at least doubled the size.
  10. Cut the biscuit base into ~ 3cm wide strips. If the strips are too thick, you can cut them in half.
  11. Take a rectangular or square glass bowl/container. Dip the biscuit stripes into the coffee and place them close to each other in the bowl.
  12. As soon as the first layer of the biscuit base is ready, pour a generous amount of cream over it and repeat the process until there are no more ingredients, but finish with a cream layer.
  13. Take cocoa and sprinkle it over the Tiramisu.
  14. Put the Tiramisu in the refrigerator for at least 4 hours or overnight.

  • 40g honey (runny) 
  • 50g vegan dark chocolate
  • 1 tbsp coconut oil

Instructions:

  1. Blend shredded coconut using a blender or process it in a food processor until you get it close to flour consistency.
  2. Take a bowl, and add blended shredded coconut, coconut milk, and honey. Combine all well until the sticky mixture is formed.
  3. Melt the chocolate at a very low temperature, and add the coconut oil to get the chocolate more liquid. Combine all until getting a smooth and liquid mixture.
  4. Make rectangular bars by hand. Cover them with melted chocolate. Tip! Take a fork, place a bar on the fork, and hold it over the chocolate mixture. Take a spoon in the other hand and cover the bar with chocolate. The excess chocolate will drip off.
