TIME: 10 min preparation, at least 10 minutes to set in the fridge | SERVINGS: 10+

Ingredients:

  • 80g shredded coconut
  • 100g vegan dark sugar-free chocolate

For decoration (optional):

  • 2 tbsp nuts
  • fresh or frozen berries or fruits

Instructions:

  1. Line a plate with baking paper.
  2. Melt the chocolate at a very low temperature.
  3. Add shredded coconut to the melted chocolate, and stir well.
  4. Take a tablespoon or small scoop, and put a small of the mixture using a spoon on the baking paper. Press it or form it as a cookie.
  5. Sprinkle each cookie with chopped nuts, fruits, or berries.
  6. Put it in the fridge to set for 10 minutes or more. Store in the fridge or freezer.

A few notes for preparation process to make them even more delicious:

  • You can use any kind of berries which you like the best.
  • I used vegan sugar-free chocolate, but chocolate chips also will work.
  • Don’t over mix the cookie mixture, that could make it dry and heavy.
  • You can use any kind of other healthy and natural liquid sweetener such as honey.
  • You can add chopped nuts if you want to make the cookies more crunchy.
  • You can spread over the cookies (the dipped chocolate part) with shredded coconut, almond flakes or chopped nuts.

Raspberry Sandwich Cookies

Ingredients:

TIME: 20 min preparation, 15 min baking | SERVINGS: 5 cookies

Cookies:

  • 130g oat flour
  • 1 tsp baking powder
  • 4 tbsp agave syrup
  • 1 ripe banana
  • 2 tbsp coconut oil
  • 50g vegan (dairy-free) sugar-free dark chocolate

Raspberry jam:

  • 75g fresh or frozen raspberries
  • 2 tbsp water
  • 1 tbsp honey or other natural sweetener
  • 1 tbsp chia seeds

Instructions:

  1. Preheat the oven to 180C.
  2. Take a mixing bowl, add all dry ingredients – flour and baking powder. Combine both and set aside.
  3. In a different bowl mash the banana with a fork, add melted coconut oil, and agave syrup. Mix all well.
  4. Combine both – wet and dry, until you get a smooth mixture.
  5. Cover the pan with a baking sheet. Take a small piece of the batter and roll it into a ball, if the batter is too sticky or dry add a bit flour or water.
  6. Place the balls of batter on the baking sheet. Press them down with the palm of your hand to flatten until you get a form of a cookie.
  7. Bake the cookies for 12-15 minutes.
  8. While the cookies are baking, make the jam.
  9. Take a small pot, add raspberries, water and honey. Mix and boil all for 5 minutes until the raspberries dissolve.
  10. Take the pot off the heat, add chia seeds and combine well. Set aside.
  11. Let the cookies and jam cool.
  12. Take two cookies, add raspberry jam on one cookie, place the second cookie on top of the jam and gently squeeze. Repeat until all cookies are out.
  13. Melt the chocolate at a very low temperature. Dip the cookies in chocolate and place them on a plate.
  14. You can eat them right away or harden the chocolate by placing them in the fridge.

Strawberries – Try to use fresh (not frozen) strawberries or other berries.
Coconut sugar – You can use any other your favorite healthy sweetener. I had coconut sugar at home, but I would like to try with agave syrup or stevia, for example.
Oat whipping cream – You can use other vegan whipping cream, but pay attention to whether it is additionally sweetened and with what kind of sweetener, is it healthy?

Quick Strawberry Dessert

TIME: 10 minutes | SERVINGS: 14

Ingredients:

  • 170g sugar-free cookies
  • 200ml oat or other vegan whipping cream
  • 50g coconut sugar
  • 300g strawberries

Instructions:

  1. Whip the oat whipping cream with a hand mixer, and add coconut sugar while whipping.
  2. Take a square or rectangular glass bowl.
  3. Arrange the cookies in an even layer into the bowl.
  4. Cut the strawberries into slieces or pieces.
  5. Arrange the strawberries in an even layer over the cookies.
  6. Spread over the strawberries whipping cream.
  7. Repeat all if needed until the glass bowl is full or the ingredients are over.
  8. Enjoy right away or chill in the fridge for a few hours or overnight.

Ingredients:

  • 2 eggs
  • 50g cocoa
  • 190g mixed oat and rice flour (you can use only oat flour as well)
  • 1 tsp baking powder
  • 40g melted coconut oil
  • 100g coconut sugar
  • 60g chopped hazelnuts

Ingredients:

  1. Preheat the oven to 180Β°C degrees and line a baking paper over the pan.
  2. Combine all dry ingredients in a large mixing bowl – flour, cocoa, baking powder.
  3. In a separate bowl add eggs, melted coconut oil, and sugar. I used a hand mixer to combine well, you can also use a spoon as well.
  4. Add the wet ingredients and stir slowly. You can use your hands to better combine, mix until you get a thick dough. If the dough seems too sticky or dry, add a little more flour or coconut oil, plant based milk or water.
  5. Mix chopped hazelnuts into the dough.
  6. Sprinkle your hands with flour to avoid the dough sticking to your palms and make round balls.
  7. Place the cookie balls on the prepared baking pan lined with baking paper.
  8. Take a fork and a glass of water, fold the fork into the water and gently press the balls. You can also do it with the palm of your hand.
  9. Bake the cookies for 12 – 15 minutes at 180C.

  1. Whisk the egg, until it’s frothy.
  2. Combine the coconut, egg mixture, chocolate pieces and agave syrup. Stir until it gets sticky. Cover the pan with a baking sheet.
  3. Shape the coconut mixture into small balls and put to the baking paper or take a small amount of the mixture with the spoon.
  4. Bake for 10-12 minutes or until the edges are slightly golden brown.
